One of my favorite ramen shops in the world is Tenkaippin. It’s a very kotteri tonkotsu from Kyoto of all places. Though concentrated in Kansai, they have a handful of shops in Tokyo, including one in my old neighborhood of Komazawa. The soup is so thick, you could almost consider it gravy. Not sure exactly what they do to make it so thick, but it sure is yummy.

Tenkaippin has a branch in Waikiki, but nothing so far on the mainland. Though the Waikiki branch doesn’t quite live up to it’s namesake, it’s good enough. Wonder if they’ll ever make the jump the rest of the way across the Pacific.
